Happy Holidays from the Burns Branch Library staff! Remember, we are closed on Tuesday, Dec. 24 and Wednesday, Dec. 25.
I love this time of year with the music, the movies and homes decorated with lights. Take a drive around either Burns or Pine Bluffs. There are some wonderful holiday displays.
And, of course, the food! Fudge, cookies, clam chowder and pumpkin bread! Let me share a few family recipes that we make only during the holiday season – and look forward to all year.
Clam Chowder
2 cans chopped clams
½ c. chopped onions
1 c. sliced celery
2 c. diced potatoes
¾ c. butter
¾ c. flour
1 pint half & half
2 c. milk
1 ½ tsp. salt
½ tsp. sugar
Drain clams, saving juice. Put clam juice in pan and add vegetables. Add water to cover and cook until done. Melt butter and add flour. Cook 1-2 minutes. Add half & half and milk and cook until thick. Add vegetables & liquid, clams, salt and sugar. Serve.
Pumpkin Bread
3 c. sugar
1 c. oil
4 eggs
1 ½ tsp. salt
2 tsp. soda
1 tsp. vanilla
2 tsp. cinnamon
2 c. pumpkin (1 can)
3 1/3 c. flour
1 c. chopped nuts (optional)
2/3 c. water
Mix together, blending well. Prepare pans by placing a piece of waxed paper, grease or spray Pam in the bottom of a bread pan. Bake 1 hour at 350 degrees.
Easy peanut butter fudge (Fantasy Fudge)
3 c. sugar
2/3 c. evaporated milk
¾ c. margarine
Combine these and bring to a rolling boil,stirring constantly. Boil 5 minutes over medium heat.
Remove and stir in 1 c. peanut butter, 7 oz. jar of marshmallow crème, 1 tsp vanilla and 1 c. chopped nuts (optional).
Beat until well blended. Pour into 9X13” pan. Let cool and cut into small squares.
